Potato Salad with Curry

A variation on a summer classic.


Ingredients


  • salt for boiling water

  • 2 pounds of new potatoes in skins

  • 1 1/2 cups mayonnaise

  • 6 Curry leaves roughly chopped

  • black pepper

  • mixed lettuce or other salad greens to serve




Instructions



  1. Place potatoes in a pan of salted water and boil for 15 min or until tender. Drain and place in large bowl to cool slightly.

  2. Mix the mayonnaise with the chopped curry and black pepper. Stir these into the potatoes while still warm. Leave to cool.

  3. Serve on a bed of salad leaves.
